Just like Chai is synonymous with India, Chai masala is what makes the Chai Indian.
There is serious science behind Dadi Ma's Chai Masala. It makes the Tea, digestible. It undoes the side effects of drinking tea. The spices not only warm the body, they also counteract the any negative effects of Tea like bloating and acidity created by the caffeine in the tea leaves. Spices like Saunth or Ginger powder and saunf, Anise seeds are digestive aids. Elaichi or Cardamon & Laung or Cloves not only freshen the breath, it also adds depth of flavour. Cinnamon is full of anti-oxidants and makes the tea full-bodied.
This is an old family recipe of ours. Amma always added just a pinch of this Chai masala in her tea cup right at the end, so the spices dont lose the aroma.
