Bay Leaf or Tej Patta, an essential spice in the Indian Spice box. Its a commonly used spices in North Indian cooking being an integral ingredient in the mild and aromatic Moghul or Mughlai cuisine. Developed in the Imperial courts of Agra and Delhi, this legacy of the Moghul dynasty is famous for dishes such as Biryanis and Kormas.
Its one of the key ingredients in the Indian Garam Masala. Bay leaves are used as flavouring in soups, stews, meat, fish, sauces and in confectionaries.
So potent is the leaf that its used as an air-purifier when burned as is.
